In My Future Home


I love "X" style shelves

Bookshelves aren't just for books

In my future home, I see lots of books. Shelves upon shelves of them. Theology, economics, history, literature, science, fictional tales, and a host of other topics. All waiting and wanting to be read. Mmm. I close my eyes, and I can picture it.


Look at the ceiling in this one!
However, my decorating style is... in process? Eclectic? Different? I'm not quite sure myself. Hence, I use pictures as my inspiration.

Chicken Enchiladas

It's always fun deciding what to have for dinner when you are hosting! And this time around, cheese enchiladas won out. Though, with several males in this household, meat is a staple of every meal. So, "chicken enchiladas" it became. :O)
Chicken Enchiladas
makes 4 servings
Chicken (as much or as little as you want ;)
2 cups shredded Monterey Jack Cheese (8oz)
1 cup shredded Cheddar Cheese (4oz)
1/2 cup sour cream
2 tablespoons fresh parsley (I used dried)
1/4 teaspoon pepper
1 medium onion, chopped (1/2 cup)
1 small green pepper, chopped (1/2 cup)
2/3 cup water
1 tablespoon chili powder
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
1/4 teaspoon ground cumin
2 whole green chilies, seeded and chopped, if desired (I used a 7oz can)
1 clove garlic, finely chopped (I used minced)
1 can (15oz)
8 corn tortillas

1. Heat oven to 350 degrees.
2. Mix cheeses, sour cream, parsley, pepper, and onion; set aside.
3. Heat remaining ingredients (except tortillas) to boiling in a pot, stirring occasionally; reduce heat. Simmer uncovered 5 min.
4. Dip each tortilla into the sauce to coat both sides. Spoon mixture onto tortillas and roll them up. Put them in a baking dish. Pour remaining sauce over enchiladas.
5.Bake uncovered 20min. Garnish with additional cheese and sour cream, if desired.

I served mine with "dirty rice." Mmm!

Book List 2011


I've decided to keep a record of all the books I read this year. Whoot! Hence, as I finish books in my "stack," the titles will make their way here. A little theology, a bit of history, a few of English lit., some children's fiction, maybe a little philosophy(?) should all be in this blog post by the end of 2011. And maybe, just maybe, I'll actually review some of them.

Perhaps you have recommendations for me? I'm always in the hunt for more good books. And I would love to hear what's in your personal "stack(s)"!

A Break from the Plan

Yes, it's true; I am already deviating from the plan for this blog. Oh well. The plan is still there, but I'm modifying it. The reason is Foyle's War. Yes, I'm embracing the series with relish. We watched another episode last night, and I fell in love with this dress:

I have WAY too much sewing to finish, so I'm not think of adding another project to the pile. But isn't it delicious? The fabric? Whoot!


Poor Sam hardly ever gets to wear cute clothes; she's always in her MTC uniform. Oh, bummer. :O)

A Fresh Start

Hi readers! Here's the new blog. Whatcha think?

To be honest, I'm excited about this fresh start. The "lack of storage" monkey wrench is giving me an opportunity to be more structured and organized about my blogging. (We hope. ;) And to my previous followers: Please keep reading and let your iron sharpen mine - as I pray mine sharpens yours. :) And leave LOTS of comments!
